Vegan lentil recipe

Precious like gold, lentils are small but rich in proteins! I dedicate this recipe to those who taught me to look for GOLD, the most precious, the one found inside each of us: Thanks Mom! They can be prepared in many ways: soups, meatballs, vegan burgers, you can make flour from them and prepare protein biscuits! I decided to prepare them in the simplest way possible so that you can cook them in a short time and consume them during the week.


200g of lentils
2 carrots
3 branches of celery
5 cherry tomatoes
1 clove garlic
bay leaves and thyme


Soak the lentils for 10 hours, in the evening before going to sleep or in the morning before leaving for work! Cut the carrot, cherry tomatoes, garlic and celery into small pieces and put them in a pan with a drizzle of oil and a glass of water, add the lentils and spices, close the lid and leave to cook over low heat for twenty/ thirty minutes. Serve everything with a nice addition of spices at the end of cooking!


They are rich in proteins and iron, they are a healthy alternative to protein ingredients such as meat or cheese. They look like coins, they are prepared for New Year's Eve so that they are auspicious for the whole year!
