Happy Apple: Apple cheesecake
It's time to talk about our beloved apple! The fruit that most of all lends itself to many preparations: from risotto, to meats and vegetables, up to dessert. Raw or cooked it always gives a pleasant sensation! I thought of combining it with ricotta to create a complete and very tasty dessert.
Ingredients for 2 jars
1 fuji or pink lady apple
half a lemon
15 pine nuts
15 raisins
powder and cinnamon sticks
a pinch of vanilla
2 tablespoons honey
1 banana
200g ricotta, better if goat's milk
100g soft cheese
30 chopped almonds for the base
Method
I peel the apple, cut it into pieces and bathe it in the juice of half a lemon squeezed. I put it to cook in a saucepan with half a glass of water, a handful of pine nuts and raisins and two cinnamon sticks, for about thirty minutes. In the meantime, I mix the ricotta, the soft cheese with the blended banana, two tablespoons of honey and a pinch of vanilla. I chop the almonds and place them in the bottoms of the glasses, pressing them with a fork. I pour the ricotta cream over the almonds, cover the glass and put it in the fridge. After about an hour I add the apple and pine nut compote and sprinkle with cinnamon.

It's a healthy dessert that tastes good! The proteins of the ricotta and cheese fill you up without weighing you down and the softness of the apple tastefully nourishes without sugaring the palate too much at the end of the meal!
The apple is rich in fiber and has valid antioxidant and anti-inflammatory properties. The dessert is made without the use of eggs, flour or sugar.
